Italian Big Soup

This recipe lives up to it's name. Loaded with pasta, sausage, and fresh veggies.

 1 Package Italian Sausage Links Uncooked
 1 Medium White Onion Diced
 1 Medium Orange Bell Pepper Diced
 4 qts Water
 2 cups White Sweet Corn
 1 Can of Black Beans
 1 cup Shredded Fresh Spinach
 2 Beef Bouillon cubes
 ½ Package of Cheese Tortellini Pasta
 ½ Package of Casarecci Pasta
 3 pinches Oregeno
 1 tbsp Sea Salt
 2 dashes Cracked Black Pepper
 2 dashes Dried Rosemary
 1 dash Dried Parsely
 1 Large Tomato Diced
 Parmesan Cheese for Garnish

In a large stock soup pot over medium heat, pinch off small chunks of the Italian sausage creating small meat balls(making sure to discard the outer casing). Cook for 5 Mins


Add in the onions and orange pepper, continuing to saute until meat is cooked through, and onions/peppers are tender.


Add water, beef Bouillon, corn, beans, and all seasonings to the pot. Bring to a boil.


Add all pasta to the pot and continue to boil until pasta is just done (10-15mins).


Remove from heat, and add shredded spinach,and diced tomato. Mix into soup and let stand for 5 minutes.


Serve with a side of bread and a garnish of fancy parmesan cheese.
